One of our family's favorite back to school lunch ideas is inspired by one of my favorite sandwiches from a popular sports bar in Southern California. The recipe is packed full of fresh, crisp produce, including kid-favorites like cucumber and sprouts, and topped with a tasty Italian dressing, all nestled between a sweet King's Hawaiian Original Dinner Rolls.
What I love most about this veggie sandwich recipe, is how easily it can be customized to fit any child's appetite. You can add or leave out any of the ingredients and still have a satisfying lunch your child will love.
Plus, the King's Hawaiian Original Dinner Rolls let me create a sandwich perfectly sized for small hands, so our kids don't feel overwhelmed trying to eat a sandwich to large for them.
And, if you have a meat-lover in your life, you can fulfill their cravings by adding sliced turkey between the layers of fresh vegetables creating a complete and nutritious meal they'll relish.
This school year, add our veggie sandwich recipe to your back to school menu. Your kids will love it!
