Hi Everyone! Sami from The Unexpected Type here with an extremely easy and healthy recipe for Key Lime Pie Popsicles. With summer right around the corner, these are the perfect addition to a warm afternoon and will satisfy your sweet craving. Popsicles make amazing snacks because you still get your “sugary” fix without the guilt!
Key Lime Pie Popsicles
Makes around 10-15 popsicles depending on mold size
- 2 cups plain Greek yogurt
- 1 cup + 2 tablespoons key lime simple syrup (recipe below)
- 1 teaspoon vanilla extract
- 1/2 cup finely crushed graham crackers
Key Lime Simple Syrup
- 1/2 cup water
- 1/2 cup key lime juice
- 1/2 cup sugar
To Make the Simple Syrup
Head the water, lime juice, and sugar in a medium saucepan on medium-low heat until the sugar dissolves. Remove from the heat and allow to completely cool.
To Make the Popsicles
Mix together the yogurt, key lime simple syrup, and the vanilla until smooth, then scoop into molds. Carefully spoon about 1 tablespoon of crumbs onto the bottom of each popsicle mold over the yogurt. Press lightly to secure. Insert sticks or tops to the molds and freeze until stiff.
When you're ready to serve, run the mold under warm water for about 20-30 seconds. Pass them out and enjoy your delicious piece of the pie in popsicle form!
